This no-reservations Trastevere trattoria draws daily queues for a reason: the carbonara is textbook-perfect, the cacio e pepe silky, and the fried artichokes shatteringly crisp. The dining room seats maybe 30 people at checked-cloth tables crammed together in the best possible way. Ingredients are seasonal and often organic, which is unusual for a Roman trattoria at this price point. The tiramisu is house-made and rivals any in the city. Expect a wait of 30-60 minutes at peak lunch and dinner, but the line moves steadily and the food justifies every minute spent outside on Via dei Vascellari.
