Chef Sarah Cicolini runs one of Rome's most exciting kitchens from a modest corner spot in Tuscolano, well outside the tourist circuit. The menu is rooted in Jewish-Roman and offal traditions β think rigatoni with pajata (intestines), tripe, sweetbreads β but executed with a precision and lightness that feels contemporary. The wine list runs to 800+ labels and the staff know every bottle. Vegetarians will struggle here; this is unapologetically a meat-focused kitchen. The neighbourhood location means you're eating with Romans who came specifically for the food, not tourists who stumbled in. Reserve at least a few days ahead.
