A family-run trattoria in the Esquilino neighbourhood that specialises not in Roman food but in dishes from Le Marche, the central Italian region the owners hail from. This distinction makes it unusual in a city where every other trattoria does carbonara. The tortello al rosso d'uovo (pasta filled with egg yolk that runs when cut) is the signature and it justifies the trip alone. The truffle dishes are excellent in season. The wine list highlights small Marche producers. It sits outside the major tourist zones, ensuring the clientele skews heavily local and the atmosphere stays warm rather than performative.
